1.Antimicrobial preservatives prevent degradation by bacteria. This method is the most traditional and ancient type of preserving—ancient methods such as pickling and adding honey prevent microorganism growth by modifying the pH level. The most commonly used antimicrobial preservative is lactic acid. 

2.Butylated hydroxytoluene (BHT), also known as dibutylhydroxytoluene, is a lipophilicorganic compound, chemically a derivative of phenol, that is useful for its antioxidantproperties.European and U.S. regulations allow small amounts to be used as a food additive. In addition to this use, BHT is widely used to prevent oxidation in fluids (e.g. fuel, oil) and other materials where free radicalsmust be controlled.

3.Nitrates and nitrites are also antimicrobial.The detailed mechanism of these chemical compounds range from inhibiting growth of the bacteria to the inhibition of specific enzymes.
