❖ Fermentation is a cellular process that is anaerobic.

❖ It is the means used by certain cells to convert organic food into simpler compounds.

❖ Fermentation occurs in fruits, bacteria, yeast, fungi as well as in mammalian muscle.

❖ Yeasts were discovered to have connection with fermentation as observed by the French chemist, Louis Pasteur.

❖ Fermentation occurs naturally but humans have used & controlled the process.
