The fluid that moves upward in the stem is not pure water. It is dilute solution of mineral ions absorbed from the soils. The solution is known as Sap. The upward transport of this sap (I. e ,water along with dissolved inorganic minerals salt) from roots to ariel parts of the plant is called ascent of sap. This process occurs in plants through xylem tissue .The water absorbed by root hairs passes through the cortex, passage cells, pericycle and finally enter the tracheary elements of xylem.. It takes either actively or passively through transpiration pull. As a result of transpiration pull and strong mutual attraction amongst water molecules (i. e., cohesion ) ,water is lifted up to leaves as a continuous unbroken column in the tracheary elements of xylem.

Through several other physical and vital forces have been suggested for ascent of sap but the transpiration pull provides the most satisfactory explaination for the process. It explains the lifting of water even to the top of the tallest trees....
