Explanation:

When a small amount of curd is added to the fresh milk  then the curd has millions and billions of lactobacillus and lactic aid bacteria in it.

It grown in the million upon getting suitable temperature then these bacteria convert the lactose sugar in the milk to lactic acid.

This forms a coagulation in the the milk and also digests the caesin protein in milk. This process is known as curdling of milk.

These microbes also increases the nutrient quality of milk as it is a great source of vitamin B12.
