In simple, when the liquid turns into gas it needs heat to evaporate. As the faster-moving molecules escape, the remaining molecules have lower average kinetic energy, and the temperature of the liquid decreases. This phenomenon is also called evaporative cooling. This is why evaporating sweat cools the human body.

In process of evaporation, water take energy from surrounding and particles whose kinetic energy is high will evaporate and rest of the water cools down . hence evaporation cause cooling. for example in earthen pot water will remain cool because particles whose kinetic energy is high evaporate through pores in earthen pot . hence water remain cool.
