rancidity is the process of oxidation of edible food materials by which their taste and smell changes

The aerial oxidation of oils and fats present in the food material giving it unpleasant taste and unpleasant smell is known as rancidity.Fats and oils in food ,if kept for a long time get oxidised and become rancid and their smell changes.
Rancidity can be avoided in the following ways:
1.Avoiding storage of food in direct contact of sunlight. .
2.By storing food in nitrogen gas
3 by storing food in air tight containers. .
4.by storing food under suitable temperature.
