Germinated grams softens the stored food in the endosperms which is transformed into active proteins, fatty acids, vitamins and other nutrients. Concentration of carbohydrates and proteins is also high in sprouting grams.That is why germinated grams highly nutritive.Hope it is reasonably helpful.

During a seed germination the cotyledon of the seed absorbs more nutrious food from the endosperm for their growth and development. Hence making the germinating grams nutritious.
