Copper is used at the bottom as it is a conductor of heat.
Due to this it can transfer heat to the food faster than any other metal which makes the food tastier, warmer and faster to be cooked.
**COPPER IS A CONDUCTOR BECAUSE IT HAS A VERY WEAK INTERMOLECULAR FORCE BETWEEN TWO OF ITS MOLECULES**
The gaps between the molecules due to weak intermolecular force is the reason that the heat can penetrate inside and be transferred to the other substance which is in the direct contact with copper.
**COPPER MAKES THE FOOD TASTIER**
Copper vessels have some healthy molecules which bind with the heat and get transferred to the food which is being cooked.
These Copper molecules make the food tastier and healthier (Same with water)
