"Due to the fermentation process the batter of idli or dosa becomes fluffy .

Fermentation carried out by lacto bacilli.

Fermentation is nothing but an anaerobic cellular process i.e.without usage of oxygen, in which  simple compounds are produced by the conversion of organic food .

The simple compounds are in the chemical energy form as adenosine-triphosphate.  

In the fermentation process, carbohydrates are converted into alcohol and carbon-dioxide. This process is done by the yeast.
