The two main reasons for low a availability of per capita per day vegetables in India are :
1. Sudden increase in the population.
2. Losses of vegetables during post harvest.
For maintenance of good health vegetables have a great importance in human diet. Vegetables contain a large amount of carbohydrates, proteins, minerals and vitamins which are essential for good health. In India importance of vegetables is relatively more because its large population is vegetarian.
We should include following vegetables in our diet for maintenance of good health :
green leafy vegetables like spinach, fenugreek leaves, lettuce and saag; cauliflower (flower buds), tomato, brinjal, root vegetables like carrot, radish, turnip and potato.
