Haloalkanes react with KCN to form alkyl halide because KCN is ionic compound and gives CN- anion which attack on carbon and the C-C bond is strong than C-N bond.
But AgCN is covalent compound and Nitrogen has lone pair so it attack on carbon to form isocyanide.
