This leavening agent makes bread dough rise through fermentation. The yeast changes the sugar in the dough into carbon dioxide gas and ethanol (alcohol). ... When chemical yeast is moistened, the tartaric acid reacts with the baking soda and the carbon dioxide gas that is released makes the batter expand.

→baking powder releases carbon dioxide on heating which makes the cake soft and spongy.

→ tartaric acid :

→ it is used in baking powder to react with it.

→note: if it is not used then cake will taste bitter due to presence of sodium bicarbonate ( baking powder).
