Plants use transpiration (similar to evaporation) to cool the leaves. They can lose huge amounts of water this way. Many herbaceous plants will droop on a hot day because they are losing water faster than the roots can extract water from the ground. The roots "catch up" during the night when transpiration decreases and the plant looks fine the next morning.
