when we add salt in bitter gourd and cook it then the solution outside the bitter gourd becomes more concentrated (i.e., it has more amount of solute comparatively)so,the outward movement of water from gourd takes place resulting to 'exosmosis'.
thus,exosmosis is the mechanism responsible for release of water from gourd.
