If you are provided with the bitter gourd to cook you generally add salt into the bitter gourd it releases water what mechanism is responsible for this

when we add salt in bitter gourd and cook it then the solution outside the bitter gourd becomes more concentrated (i.e., it has more amount of solute comparatively)so,the outward movement of water from gourd takes place resulting to 'exosmosis'.
thus,exosmosis is the mechanism responsible for release of water from gourd.

Exosmosis is the passage of fluid from semipermeable membrane to outer surrounding medium which contains solution with lower concentration as compared to inner part with higher concentration which is bitter gourd here.
