in the electrolytic refining of copper what would you take as the cathode and the electrolyte

Thick pure copper strip will be obtained at cathode. And impure metal strip that needs to be purified will be taken as anode. Here CuSO4 or any other salt solution of Cu will be used as electrolyte. The impurities that settle down below anode is called as anode mud.
