Manu was heating oil to fry potato chips . The oil suddenly caught fire . he poured water to extinguish fire .is it correct or what should be done in that case?

Incorrect. Oil will float on water and will continue to burn and will not get extinguished. In case of fires from oil or liquid, it should be endeavoured to cut off the supply of oxygen to the burning substance. Best and practical way is to throw a large n thick rug to cover the burning zone. In case oil catching fire in a frying pan, just cover the frying pan with a lid to cut off the oxygen supply. Industrially available foam extinguishers are of course the most professional options.

No. Because water is not suitable for fires involving oil.
Manu should have switched off the flame of the burner and put a lid on the frying pan. By doing this the contact between fuel and oxygen is cut off and the flame will go off.
