cohesive forces among the molecules of mercury are more than the adhesive forces.However, in water, the adhesive forces are greater than cohesive forces, so it wets our skin and other substances.

Hi, the reason is that the viscosity of Mercury is low 0.159*10^-2 (kg/ms).
(for water = 0.105*10^-2 (kg/ms))
