Oxalic acid is present in Tomato
Tartaric acid is present in Tamarind
Acetic acid is present in vinegar
The major acid present in tomatoes is oxalic acid. After maturation of tomatoes, the vitamin C decreases as tomatoes and the number of oxalic acid increases. Oxalic acid is a common dietary antinutrient.
An antioxidant, tartaric acid is the reason why tamarind is acidic. In grapes and bananas, tartaric acid is also present, but not in citrus fruits. Vinegar is an aqueous solution of acetic acid.
Acetic acid is majorly produced by the bacterial fermentation process. Vinegar is now mainly used as or in pickling as a cooking ingredient.
