So as you know carbohydrates are needed for humans and also animals.
In Humans Carbohydrates are breakdown into sugars and starch so that it is digested.
In Ruminants Carbohydrate is digested in the form of cellulose because of certain bacteria which is present.
Such food need a lot of chewing and hence ruminants swallow it quickly so that they don't get enough food as other ruminants will eat them up. So they swallow the grass quickly and store them in a sac like structure in their body which is known as rumen.
At the time of rest they bring back the partially digested food and chew it well this is called chewing cud.
Partially digested food is known as cud.
