Odisha (formerly Orissa) is one of the 29 states of India, located in the eastern coast. It is surrounded by the states of West Bengal to the north-east, Jharkhand to the north, Chhattisgarh to the west and north-west, Andhra Pradesh and Telangana to the south and south-west. Odia (formerly known as Oriya) is the official and most widely spoken language, spoken by 33.2 million according to the 2001 Census. The modern state of Odisha was established on 1 April 1936, as a province in British India, and consisted predominantly of Odia-speaking regions. April 1 is celebrated as Odisha Day.
FOOD:
Compared to other regional Indian cuisines, Odia cuisine uses less oil and is less spicy while nonetheless remaining flavourful.Rice is the staple food of this region. Mustard oil is used in some dishes as the cooking medium, but ghee(made up of cow milk) is preferred in temples. In old times food was traditionally served on banana leaves or disposable plates made of salleaves.
Odia cooks, particularly from the Puri region, were much sought after due to their ability to cook food in accordance with Hindu scriptures. During the 19th century, many Odia cooks were employed in Bengal and they took many Odia dishes with them. This period also saw a heavy demand for Brahmin cooks, leading many Odia cooks to fake their castes.
Yoghurt is used in dishes. Many sweets of the region are based on chhena (cheese)

The Odia , formerly known as Oriya, are an Indo-Aryan ethnic group native to the East Indian state of Odisha and have the Odia language as their mother tongue. They constitute a majority in the eastern coastal state of Odisha, with minority populations in Uttarandhra, Chhattisgarh, Jharkhand, Gujarat and West Bengal.
