1. When baking soda reacts with an acid, it acts like a base and forms a salt and water.

NaHCO3+HCl➡️NaCl+H2O

2. Baking powder when heated forms harmless washing powder, water and carbon dioxide. This carbon dioxide escapes from the dough of the cake, this creating pores in it which in turn makes the cake spongy. Hence it is used in the baking industry.

3. Baking soda when heated releases carbon dioxide as mentioned above. This carbon dioxide cuts off the supply of oxygen to the fire. Thus extinguishing it.
