raw veggies and fruits are kept in fridge because the get spoilt very quickly

jams and pickles are kept outside because
they already contain preservatives the allow them to last longer

Raw vegetables and fruits are kept in refrigerator whereas jams and pickles are kept outside because raw vegetables and fruits get easily infected by micro organisms and get spoiled. They are kept in refrigerator to inhibit the growth of microbes. Jams and pickles contain sugar and salt as preservatives. These preservatives forms a protective layer and spoilage of these products by inhibiting the growth of various micro organisms.
