Renin acts on milk changing casein into calcium paracaseinate at 1-3 pH

It's due to following reasons :

- Gastric glands are situated in the walls of the stomach and play a vital role in secreting the gastric juice which consists of three main components ,i.e, pepsin , rennin enzymes and also hydrochloric acid.

- So basically casein is a protein milk and renin works on it by converting casein into para-caseinate .

- This process of conversion is called as curdling of the milk.
