I think it's straight forward if we understood the concept of friction in itself. Friction exist based on the relative motion between two surface sliding surface. However the magnitude of the friction depends on the reluctance to motion of this surface which is a function of its finness or coarseness of the surface.
When a surface is smooth, there is little or no resistance to motion when another smooth surface glides over it. However the result will be different if one surface is smooth and the other is rough.
So why do smooth surface have less friction, it's basically because there is less resistance when they slide over each other
