The bread or idli dough rises because of growth of yeast cells.
The yeast cells reproduce in great numbers if there is lot of food around to take benefit from the food.
When they reproduce, they normally develop a small bud from one side of themselves.
Then they put a tiny nucleus and pinch it off to make new smaller yeast cell.
