2 . Food is tasted and mixed with saliva that is secreted by several sets of glands. Besides the many minute glands that secrete saliva, there are three major pairs of salivary glands: the parotid, the submandibular, and the sublingual glands. The parotid glands, the largest of the pairs, are located at the side of the face, below and in front of each ear. The parotid glands are enclosed in sheaths that limit the extent of their swelling when inflamed, as in mumps. The submandibular glands, which are rounded in shape, lie near the inner side of the lower jawbone, in front of the sternomastoid muscle (the prominent muscle of the jaw). The sublingual glands lie directly under the mucous membrane covering the floor of the mouth beneath the tongue.
