Gorges are deep valleys established as a result of perennial river erosion .This happens after a long period of time and can take up to millions of years to fully develop.

The edges are usually so steep whereby it is as a result of river water forcefully cutting onto the earths surface .

Later on they can continue being river valleys while most of them dry up and just remain to be very deep depressions that can even range up to miles deep.
