Oxygen and heat are two major causes of rancidity of fat. Bacterial actions can also cause it.
1. You should store fat or oil containing food in cool place and protect it from direct sunlight
2. You should protect it from contact of air as far as possible. Because oxidative propertiy of oxygen will rancid fat.
3. Many antioxidants are also used to protect fat containing substances or foods to prevent rancidity.
4. Food with fat should be preserved in air-tight container with untransparent coating
