When a tissue orginates from same origin but on maturity become different with respective of roles and also looses the ability to divide is called differentiation is plants.

In order to explain it more briefly :-

Plant tissues are have differention of meristematic and permanent tissue. What you understand by it?

This means that at some stage of life ( seedling ) the meristematic and permanent tissue were same. But with maturity there functions differed and permanent tissue lost ability to divide Temporarily or permanently. This is called differentiation.
