Stable food or shelf-stable food refers to food that can be stored in a sealed container at room temperature. Ideally, such foods would be stored in a refrigerator. However, by treating them to various  processes, the foods can be stored at ambient or room temperature for a long period of time. Some methods of making food shelf stable are by lessening the water content present in it, sterilizing it and keeping it in an airtight container and enhancing its acidity. These methods ensure that the texture and taste of the food is within acceptable limits.
