Gamma Rays are extremely high energy radiations which can break the protein and DNA structures inside your body, forming tumour and cancer cells.
Once hit by gamma Rays, the cells and tissues of that area of body will become unable to regenerate or be repaired.
So... In simpler words, you ain't gonna turn into Hulk.

Gama rays are highly radioactive in nature.Threfore if gamma rays pass through an organism an organism will simply burn within seconds will get converted into smoke.Even the person's ash will not remain.Eg:- So you can think that what had been happened when the nuclear bomb was dropped in Hiroshima and Nagasaki. The people who were few metres beyond it faces the above fate.Whereas, the people who were few kilometres beyond it got infected with skin problems and other disorders.Even today the effect of Nuclear Bomb had not been nullified.
