Just like an octet where you have 8 electrons, a sextet is a structure in which there are 6 electrons in outer shell... Such molecules are formed usually during fission of a covalent bond.

Eg. In the reaction H_{3}C-Br =>  H_{3}C^{+}  + Br^{-} , the methyl carbocation has 6 electrons and hence has sextet electronic structure.
