What is anhydrous calcium chloride? why is it called so?

Anhydrous means dry.
Therefore, it is dry CaCl²

CaCl².2H²O is Hydrous Calcium Chloride

Calcium chloride in found in nature contains some water molecules also inside the crystal structure.  That is called hydrous calcium chloride.

When it is heated , the water escapes.  Then Ca Cl2 remains. That is anhydrous calcium chloride.
