Fermentation is the break down of sugar into an acid or alcohol. In this process, oxygen is not used and produces CO2 and ethyl alcohol as end products.

Fermentation refers to the metabolic process that converts sugar to acids, gases or alcohol. It not only occurs in yeast and bacteria but also in oxygen starved muscle cells.
