what is meaning of a day without sunshine is a day without you

It means that just like if there is no sun, then we can’t see anything, then too much darkness will be there. We can see only because of the sun. They are trying to say that a day without you [you as a xyz person] is as difficult as a day without sunshine. It’s basically an expression of missing someone badly.
