Ans: Rancidity: It is defined as chemical decomposition of oils and fats which in another words is spoiling food materials that difficult for consumption.

It can be prevented by following methods:

(i) The packing of food materials should be replaced the air with Nitrogen.

(ii) The food materials should be placed at very low temperatures.

(iii) Addition of antioxidants also prevents rancidity process.

RANCIDITY

It is the process of slow oxidation of oil and fats (which are volatile in nature) present in the food materials resulting in change of smell and taste in them.

The methods to prevent rancidity are -

(i) Keeping the food materials in airtight containers.

(ii) Refrigeration of cooked food at low temperatures.

(iii) Packing up food items like potato wafers etc, in packets containing nitrogen ags instead of air.

(iv) Avoid keeping the cooled food and food materials in direct sunlight.
