Actually I think there is no difference between and and & but still we use & to make save our time

The choice as to which to use comes down to the degree of formality of ur text, possible also how much space u have available.
In generally using & implies a much more informal tone then and.
U will never be criticized for using and. if u use & in anything but informal notes, tweets and the like.
