Saliva plays an important role in the digestion of food .Saliva contains an enzyme(bio catalyst) known as salivary amylase which is also called as ptylin. It breaks down the carbohydrates into simple sugars. It converts the food into maltose.It is released from the salivary glands present on the sides of tongue.
