Which one of these is the odd one: wheat, maize, millet, rice?

Wheat is the odd one. Unlike the others, it produces large amounts of gluten, an important structural component of bread. Without the gluten in wheat, the bread cultures of Europe, the middle East, northern Mediterranean, and the Indian subcontinent would be impossible.

Maize is the odd one. Unlike the others, maize is wholly indigenous to the New World, unheard of in Europe, Africa, and Asia until after the Columbian invasion.

Rice is the odd one. Of all the cereal grains, it is the only one which tolerates being grown in flooded conditions. This allows a form of rice agriculture which allows flooded field to be used for weed and pest control.

Millet is the odd one. Unlike the others, there is nothing particularly special about millet. It’s a family of cereal grains, grown and cultivated like other cereal grains. Nothing odd about it — which, in this list, is pretty odd.
