Ptyalin is secreted by salivary glands which are present in mouth. Its role in digestion is that it hydrolyses about 30-40℅ of starch into maltose and isomaltose at pH 6.8:

salivary amylase
Starch-------------------------->Maltose+ Isomaltose
6.8pH, Cl-
