Anaerobic respiration.

Fermentation is an anaerobic type of food energy release.

It happens when there is insufficient oxygen or no oxygen to help aerobic respiration.

Human muscle cells are able to produce ATP with or without oxygen.

They have ample ATP to help strenuous activities like fast running for almost three seconds.

A secondary energy supply may keep the muscle cells energized for around ten seconds more.

In order to go beyond that, the muscles must create ATP by fermentation through the anaerobic process.

Many food industries also make use of fermentation through both alcoholic as well as lactic acid to make many food products.
