Let's keep this is mind.
Smaller the area, greater is the pressure.
If cutting instruments are blunt, then when it cuts any substance ,we have to apply greater pressure due to large area.But if these instruments are sharp we can easily cut things with less pressure as the force is over small area.

Its because of the convenience of one.
The cutting instruments are sharp as one will has to apply a less force in cutting the objects.
If the instrument is made blunt then a greater force is to be needed to cut the same object.
