Conduction occurs in solids. Metals are good conductors of heat. So if they are used, then they will absorb heat and holding the utensil with handle will not be possible. But wood and plastic is a bad conductor of heat so it won’t absorb much heat and we can easily hold the utensils. Therefore the handles are made of wood or plastic
