In pyridine have the lone pair is in an sp2 orbital, projecting outward from the ring in the same plane as the σ bonds , Thus it would be a bit good to partner with a certain acid because it is able to pick up protein from the acid. The proton is also captured from HCl acid in the schotten Baumann reaction so it will be easily soluble.

 

While piperidine has the electronic pair in sp3 orbital , Thus, this pair orbital is weakest associated with the nucleus from the pyridine condition  

Thus pyridine will be more stable than piperidine, which is why it is preferred to use pyridine that is less basic than piperidine in the schotten Baumann.
