the water particles(molecules) are always in a state of motion due to the fact that they have kinetic energy
When we heat the water(liquid) the particles possess more and more kinetic energy and they move at a higher speed
When particles get more than average kinetic energy they leave the surface of water and evaporate in form of water vapours
