Water sprinkled upon roof take the heat equal to latent heat of vapourisation and get evaporated making the environment cool ( as it absorbs the heat ).

On a Hot sunny day the temperature is very high and evaporation causes cooling (it causes cooling by absorbing heat from surroundings)

Thus when water is sprinkled on roofs water takes up heat from the surroundings and make the environment there (the house) cooler.

Hope it helps
