Why do people sprinkle water on the roof after a hot sunny day?​

Because evaporation of water causes cooling. Water aborbs heat ,from the roof or ground it has been sprinkled on, and evaporates hence leaving the surface cooler. It is the same reason why earthern pots are often covered with wet cloth. So that the wet cloth absorbs the heat and keeps the pot cool hence keeping the water inside cool.

In hot summer days the roof of our respective houses gets hot. Thus,we sprinkle water on our roof so that water droplets absorb heat of the roof. They will use this hiddin form of heat or latent heat to overcome intermolecular force of attraction and changes into gaseous state.

This process of changing into gaseous without reaching its boiling point is called evaporation which leads to cooling effect and hence cools the roofs of our houses.
