Coz when water enters overly, the plant may not be able to do respiration. so, it Drys up.

Plant roots require oxygen for root respiration. Plants adapted to thrive in water logged conditions can still respire using the available water. Those not adapted will die because of less oxygen and also because of root decay happened due to anaerobic situations.
