The whole purpose of the red blood cell is to carry oxygen around the body.
Without a nucleus, the red blood cell can use its whole volume to pack in as much haemaglobin as possible so then it can carry as much oxygen as possible.

Loss of nucleus makes the Red blood cells Bi concave thus increasing the right surface area volume ratio for absorbing more oxygen....
1.Space in between increase
2.More Rbc can be accommodated in same space...
