Why do the big particles of soil settle at the bottom but big particles of plants float on the water surface? It is because of buoyancy. ... Particles of soil are more denser and can also break the surface tension of water without resistance and do not have air pockets in them to make them buoyant

The soil do not have air pockets to make them buoyant and therefore they merge into the water. The big particles of plants have bigger surface area and thus the surface tension of water is maintained. It helps in the floating of the plant.
